Healthy Finger Foods for the Holiday Season

It’s the Holiday Season!

Whether you’re hosting a dinner or want to bring something to the dinner you’re invited to, having a few quick recipes for hors d'oeuvres/finger foods is always great. We got two ideas for you - Salmon with Blackberries and Eggplant Bruschetta. Which one would you like to try?

***Salmon with Blackberries***

INGREDIENTS:

  • Smoked salmon

  • Crème fraiche

  • Blackberry syrup

  • Fresh blackberries

INSTRUCTIONS:

  1. On a long slice of smoked salmon, place 1 oz crème fraiche.

  2. Gently roll the salmon and fasten the end with a skewer.

  3. Sprinkle 1 tsp blackberry syrup and top it with a fresh blackberry.

***Eggplant Bruschetta***

INGREDIENTS:

  • 1 clove garlic

  • 6 slices baguette

  • 1 eggplant

  • 2 large tomatoes

  • 1 tsp olive oil

  • Pinch of salt

  • 6 oz cream cheese

  • Fresh basil leaves

  • 1/2 tbsp extra virgin olive oil

INSTRUCTIONS:

  1. Preheat a grill pan.

  2. Cut 1 clove garlic in half. Rub the garlic on baguette and cook each side for 1-2 minutes.

  3. Cut 1 eggplant and 2 large tomatoes into bite-size pieces.

  4. Cook the vegetables on a frying pan with olive oil and pinch of salt for 5-10 minutes.

  5. On the baguette, add the cooked veggies, cream cheese, and fresh leaves of basil.

  6. Sprinkle olive oil to taste
