Happy New Year!

Many people set goals around this time of the year. Did you set one yet?

Here are some examples of awesome goals that we’ve heard so far:

  • Cook more often - at least 3 times a week

  • Start packing lunch to work

  • Try new foods - order something different when eating out and buy new ingredients

  • Walk to work (20 minutes) instead of taking the bus

  • Eat more fish/veggies/fruits

  • Get into the habit of “Meatless Monday”

  • Get at least 6 hours of sleep every day - aim for 8

These goal may be difficult to achieve at the beginning, but once they become a habit, it’ll get easier and easier.

Salmon Poke

For our first recipe of the year, we are introducing something new and of course healthy - Salmon Poke! Poke is a Hawaiian dish with marinated raw fish, often served over rice. It’s getting popular these days so some of you may have tried it already. If you haven’t, you’re missing out! Let’s go get some salmon today.

If you’re not a fan of raw fish, you can always replace it with cooked items like cooked shrimp. If you don’t eat fish, you can use tofu instead.

Here is the recipe:

INGREDIENTS:

  • 3-4 cherry tomatoes

  • Juice of 1 lime

  • Bunch of cilantro

  • 2 tbsp olive oil

  • 1 tsp honey

  • Pinch of salt

  • 7 oz skinless sashimi-quality salmon fillet

  • 1 avocado

  • 4 oz cucumbers

  • 7 oz boiled canned chickpeas

  • 3 oz seaweed salad

  • Sesame (optional)

DIRECTIONS:

  1. First, we'll make the marinade/sauce. In a blender, mix cherry tomatoes, lime juice, cilantro, olive oil, honey, and salt.

  2. Cut salmon into bite-size cubes.

  3. Take half of the sauce and marinate the salmon cubes.

  4. Peel and slice an avocado. Cut cucumbers into cubes. Drain the canned chickpeas.

  5. Layer chickpeas on the bottom of a bowl.

  6. Add the marinated salmon cubes, avocado, cucumbers and seaweed salad.

  7. Pour the remaining half of the sauce and sprinkle sesame (to taste). Enjoy!
